Ahhh . .. I love finding ways to avoid wasting in the kitchen. My newest discovery is roasted melon seeds. Why should pumpkin seeds get all the love? I have not tried roasting watermelon seeds, but it’s on my list. My kids actually got in a fight this week because my littlest girl hogged all the cantaloupe seeds.
The most difficult part is separating the seeds from the melon flesh. Just put seeds in a mesh sieve, wash, separating any remaining melon flesh from seeds. Today I made roasted honeydew and cantaloupe seeds, but I’m sure you can use seeds of any variety. Just cut the washed melon in half, and scoop out the seeds. Wash the seeds, and dry. Place on cookie sheet and coat with cooking spray. Sprinkle with fine salt. Roast at 200 for an hour, tossing every 20 minutes.
