Thrifty homemaking for me doesn’t mean cheap food, it means better quality food for a fraction of the price. Such is the case for homemade bread crumbs.
While these bread crumbs can be made with any stale bread I use homemade bread from freshly ground grain. No matter what bread you use, this is so much less expensive than store bought and can be adjusted to your taste. Homemade garlic and onion powders, and home dehydrated or freeze dried herbs takes these breadcrumbs to another level, but not necessary.
Dry out an entire loaf and make half plain and the other half Italian. Use these breadcrumbs and make into a topping for casserole by browning in butter first, or simply use as a binder.
Italian BreadcrumbsÂ
Half loaf of bread (if you can, use homemade to make this preservative free)
2 TBSP dried parsley
1/2 tsp dried thyme
1 1/2 tsp dried basil
3/4 tsp onion powder
3/4 tsp garlic powder
1 1/2 tsp salt
1/4 tsp pepper
Tear bread and either leave on a cookie sheet and dry out, or put in a dehydrator.
Alternatively, you can toast in the oven. (Homemade bread will take much longer to dry) After your bread is dry, grind in a food processor until fine. You could also put in a gallon bag and crush with a rolling pin.
Add all seasonings to bread crumb mixture and pulse until incorporated. Makes one quart.
