Bean Burrito Burgers

Stretching your meat further with beans and rice is a solid budget cooking trick. Save leftover cooked beans and also rice just for these burgers. Sometimes I use brown rice in my burgers, making them especially healthy. I served sweet potato oven fries and salad with lime cilantro vinaigrette. These days though, I’m not eating the sweet potato fries until I lose some weight. Target just put out their bathing suits, so now I’m scared.

Bean Burrito Burgers

  • 1 cup cold leftover white or brown rice
  • 1 pound ground beef
  • 1 1/2 cups pinto or black beans, rinsed and drained
  • 2 tsp chili powder
  • 1  teaspoons cumin
  • 1 tablespoon grill seasoning
  • 1 tablespoon oil

Combine rice, meat and beans with spices and grill seasoning. Shape into burgers and chill for an hour at least.  Pan fry.
