It’s Cabbage Week at Preserved Home! With rock-bottom prices the week of St. Patrick’s Day, you should grab several heads to cook with, and preserve. Cabbages at Aldi this week are 79 cents each – – and that’s for 3 1/2 pounds! Friends, this is how you save money on your budget – – stock up when big sales come about. I have sauerkraut fermenting, cabbage dehydrating, and I have plans to make freezer slaw.  I will be making two cabbage, beef and rice casseroles – – one for dinner and one for the freezer. I also might freeze some cabbage, and compare it to my dehydrated cabbage after rehydration. I’ll be posting recipes for all of these things, so go buy yourself some cheap cabbages!

Dehydrating cabbage is really easy. All you do is shred with a knife or food processor, put on dehydrating trays and dry at 125 for about 15 hours, or until dry. Length of time is dependent on how thick or thin you shred your cabbage. Dehydrator Tray with Cabbage

When you are done, simply store in a closed container. You can use dehydrated cabbage as a base for casseroles, and an addition to soups or stews. You can rehydrate and saute in butter and salt. Cabbage shrinks down significantly, and an entire head fits in a quart jar!

    Can this been done in a conventional oven to dehydrate?

      Hi Ruth. You can dehydrate in some convection ovens, but I’ve never done this. Also not certain about the amount of electricity used in the process. (Dehydrators use just the same amount of energy as a light bulb.) When you dehydrate vegetables, it’s usually at 135 degrees. I’m not certain how low your oven goes, but that’s the temp normally used for dehydrators.

    Got you beat! Although this is March 2015, I just bought 10 heads for $.29 EACH at Aldi’s here in Ballston Spa, NY. They weigh in at around 2 1/2# each. BTW, I have this killer recipe for “Colcannon Soup” that was really good to begin with (has some potato cooked in with the cabbage), but I added some curry powder and it makes me drool just thinking about it. I’ll certainly be doing some dehydrating and using it for that soup.

    Tab, it was 4 pounds for $1, which is about the same deal at Aldi, 79 cents for 3 1/2 pounds. Both great deals!
